1 med Green Bell Pepper, chopped
6 Scallions, sliced
1 lb lean Ground Beef
16 oz Chili Beans in sauce
1 C Chunky Salsa
2 T Chipotle Rub
1 box Jiff Corn Muffin Mix
8 oz Sour Cream
1 Egg
1/2 C shredded Cheese
1 Tomato, seeded and diced

Directions:
Directions:
Separate onion whites from onion greens. Place bell pepper, onions whites and ground beef in a casserole dish (preferably a Deep Dish Baker). Mix well. Cover and microwave on high for 5 minutes. Break up beef and mix well again. Cover and microwave on high for another 4 minutes or until beef is no longer pink. Carefully pour off juices. Add beans, salsa and rub to casserole dish and mix well. Cover and microwave on high for 5 minutes. Combine muffin mix, sour cream and egg in a separate bowl. Pour muffin mix over the chili mixture and spread evenly to the edges. Cover and microwave on high for 9 minutes. Sprinkle cheese over the top, cover and let stand for 5 minutes. Top with onion greens and tomatoes.
