1 head cauliflower, broken or cut into florets
cooking spray
1 3/4 cups Gruyere, grated
1/2 cup Parmesan, grated
2 T. butter
2 T. flour
1 1/4 cups milk
salt and pepper, to taste
nutmeg (optional)
1/4 cup bread crumbs

Directions:
Directions:
Steam cauliflower florets until tender; drain and discard any liquid. After the cauliflower is done, preheat oven to 350º. Spray oven-safe dish with cooking spray. Place cauliflower florets in the oven-safe dish. Sprinkle half of the grated cheeses onto the cauliflower. In a small saucepan, make Béchamel sauce: melt butter, whisk in flour, add milk slowly, stirring constantly to avoid lumps. Cook Béchamel for 3 to 4 minutes until it thickens. Add salt and pepper, and nutmeg, if you like, to season the Béchamel sauce. Pour Béchamel over the cauliflower and cheeses. Top with the rest of the cheeses and bread crumbs. Bake for 30 minutes until golden.
