2 cups well cooked or canned chickpeas, liquid reserved, 1/2 cup tahini, 1/4 cup olive oil (plus more for drizzling), 2 cloves garlic, peeled( I add more), salt and freshly ground black pepper to taste, 1 tbsp ground cumin, juice of 1 lemon, plus more as needed

Put everything in a food processor or blender and begin to process; add chickpea liquid as needed. Taste and adjust seasoning. Serve drizzled with olive oil and sprinkled with cumin and fresh parsley.
