Chicken Filling: Mix together 4 c. shredded cooked chicken, 2c. shredded jack cheese, 1 (7oz) can diced green chiles, salt to taste.

Sauce:
1 lb. fresh tomatillos or 2 (13oz) cans tomatillos
2 green chiles, charred, peeled and seeded
2-3 jalapenos, partially seeded, veins removed
2 garlic cloves
c. chicken broth
c. rice vinegar
1 T. light oil
1 t. ground cumin
to c. cilantro, snipped
Salt to taste
2 T. lime juice
1 t. sugar

After removing tomatillos husks, rinse them with warm water and cut into quarters. Cut chiles and jalapeno into pieces. Add garlic and chop to coarse puree in processor. Place mixture in saucepan and simmer everything except cilantro for 12-15 minutes.

Heat 12 corn tortillas wrapped in foil in 350 oven for 10-15 minutes or until hot and softened. Fill each tortilla with some chicken mixture and about 1 T. sauce. Roll, place seam side down in greased baking dish. Pour remaining sauce over enchiladas. Top with cheese. Bake at 350. To serve, place spoonful of sour cream and green onion.
