2 large (~2 lbs) sweet potatoes or yams
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon pepper

Directions:
Directions:
Preheat oven to 425. Scrub potatoes and cut into thin strips resembling french fries (1/4"x1/4"x4"). Toss potatoes into a bowl with all the other ingredients. Lay in a single layer on a baking sheet sprayed with nonstick spray. Bake 15 minutes, turn and bake another 10 minutes.

Pete and I originally found a little place miles down the Alaskan road that served the most incredible yam fries. Theirs, I found out, were fried, so I set out to find a delicious yam fry substitute for our kitchen. Stumbling on this recipe, I tried it and brought it to a potluck. They were gone before the food was ever ready and people were asking for the recipe, wishing I'd made more. So, this has become one of the standbys for potlucks, parties, or just a delicious accompaniment to an at-home dinner, but it is well-loved by us all!
