4 lb. Granny Smith apples, peeled and cored, 1 2 by 1/2" piece lemon zest and 4 C sugar.

Directions:
Quarted apples. Place apples and zest in a large, microwaveable bowl. Cover tightly with plastic and cook in microwave 10 min. on high. Prick plastic to release steam, then uncover. Cook uncovered for 30 min. stirring every 10 min. Remove and process in food processor until smooth. Return to bowl and stir in 3 C sugar. Cook uncovered 20 min. or until very thick. Cool Smooth mixture into jell-roll pan with spatula and refrigerate until firm about 4 hrs. Cut into 1" squares and coat each with sugar. Place on cake rack and dry overnight.
