1 envelope yeast ( or 2 1/2 TSP. rapid rise yeast)
1/4 cup warm water ( approve. 105 degrees)
1/3 CUP SUGAR
1/4 CUP BUTTER ( UNSALTED CAN BE SUBSTITUTED)
1 CUP MILK, SCALDED
1 EACH WHOLE LARGE EGG
4 1/2 CUP ALL PURPOSE FLOUR SIFTED

2 TBSP MELTED BUTTER FOR BRUSHING TOP OF ROLLS

SPRINKLE YEAST OVER 1/4 CUP WARM WATER, ADD 1 TBSP. OF THE SUGAR TO YEAST WATER, MIX LIGHTLY AND SET ASIDE TO WORK, ABOUT
8 TO 10 MINUTES.
PUT MILK IN A SAUCE PAN AND SCALD, REMOVE FROM HEAT, ADD THE REMAINING SUGAR, 1 TSP. SALT, STIR TO MIX INGREDIENTS, ADD 1/4
CUP BUTTER AND SET ASIDE TO COOL TO 105 TO 115 DEGREES.
COMBINE THE YEAST WATER AND THE SCALDED MILK MIXTURE AND 1 LARGE SLIGHTLY BEATEN EGG.
MIX INGREDIENTS TO COMBINE IN A LARGE MIXING BOWL
WITH PADDLE ATTACHMENT BEAT IN 1 CUP OF THE FLOUR AT A TIME
BEATING WELL AFTER EACH ADDITION. AFTER YOU HAVE ADDED 4 CUPS OF THE FLOUR SWITCH TO A DOUGH HOOK ATTACHMENT AND KNEAD DOUGH FOR 5 MINUTES ON MEDIUM SPEED, USE THE REMAINING 1/4 CUP OF FLOUR DURING KNEADING AS NECESSARY.
THE DOUGH WILL BE STICKY. PLACE IN A BUTTERED BOWL COVER WITH PLASTIC WRAP TO RISE, ABOUT 1 1/2 HOURS IN A WARM LOCATION.WHEN DOUBLED IN SIZE REMOVE DOUGH FROM THE BOWL DO NOT PUNCH DOWN OR FLATTEN, CUT DOUGH INTO EQUAL
PIECES WITH SCISSORS OR KNIFE. YIELDS ABOUT 24 ROLLS
LIGHTLY ROLL DOUGH INTO ROUND BALLS, PLACE IN A BAKING PAN 13 X 9 X 2 WELL GREASED. COVER PAN WITH A CLOTH LET RISE UNTIL ROLLS ARE DOUBLE, REMOVE CLOTH THEN BRUSH ROLLS WITH THE 2 TBSP. OF MELTED BUTTER, PLACE ON MIDDLE RACK OF A PREHEATED 375 DEGREE OVEN AND BAKE FOR 18 TO 20 MINUTES AND ROLLS ARE LIGHTLY BROWNED.
REMOVE FROM OVEN PLACE PAN ON A WIRE RACK TO COOL

i BRUSH THE TOPS WITH THE MELTED BUTTER BEFORE I PUT THEM IN THE OVEN AND AGAIN AS SOON AS THEY COME FROM THE OVEN. OR YOU CAN BRUSH THE TOPS WITH EGG WASH BEFORE BAKING FOR A DEEPER BROWN COLOR IF YOU PREFER
TRY THEM WITH BUTTER AND ORANGE MARMALADE WOW!
