4 chicken breasts, skinned, boned and halved; salt and pepper to taste; 1 stock unsalted butter, cut into finger sized pieces; 1 cup flour; 2 eggs, lightly beaten; 2 cups fresh bread crumbs; 1/2 cup vegetable oil, for deep frying;

Flatten the boned breast to 1/4 inch thickness by pounding lightly with a kitchen mallet or rolling pin. Lay out the flattened breasts. Sprinkle with salt and pepper to taste. Place a finger of butter on each breast half. Roll up the butter in the breast as you would wrap a package, tucking in the ends at the beginning of the roll. Dip the rolled breasts in the flour, then in the beaten eggs and finally roll them in the bread crumbs. Leave the shoulder bone sticking halfway out on one end. Freeze for one hour. Heat the oil to 380 degrees in the saucepan or deep skillet; there should be enough oil to cover the rolled breasts. Deep fry the breasts for 5 to 7 minutes or until golden brown. Drain them on paper towels and serve immediately.
