1 c. fresh mushrooms, sliced
2 T butter, melted
8 skinless, boned chicken breast halves
1/3 c. flour
13 c. butter, divided
1/2 c marsala wine or apple juice
1/3 c. chicken broth
1/4 tsp. salt
18 tsp. pepper
1/2 c. mozzarella cheese, shredded
12 c grated Parmesan
1/4 c. sliced green onion

Saute mushrooms in 2 T butter and set aside. Flatten chicken breasts to about 1/2 in. between plastic wrap using a meat mallet or rolling pin. Dredge chicken in flour and brown in 1-2 T butter in a large skillet. Place chicken in greased 9 x 13 baking dish. Add wine and broth to skillet drippings, bring to a boil, reduce heat and simmer for 5-6 minutes. Stir in salt and pepper. Pour mushrooms over chicken in baking dish, pour sauce evenly over chicken. Combine cheeses and green onions and sprinkle over chicken. Bake uncovered at 375 for 40-45 minutes.
