2/3c. butter
2/3c. flour
6c. milk
1c. bacon,cooked & crumbled
salt & pepper to taste
4 large baked potatoes 1 c.sour cream
5-oz. shredded cheese
4 chopped green onions

Directions:
Directions:
Melt butter in saucepan over medium heat. Using a whisk blend flour until smooth. Gradually add milk, whisking continually.Add salt& pepper & let simmer over low heat stir constantly.
Cut potatoes in half and scoop out meat inside.Chop half potato peels and throw away the rest.Whisk in the potato meat when milk is very hot.
Stir in green onions and potato peels.Add sour and bacon. Heat thoroughly. Add cheese and stir until melted. Garnish with chives, grated cheese and a little crumbled bacon.
