3 - 8oz Cream cheese, softened 1 c white sugar 1 t vanilla 3 eggs Vanilla wafers Silver Cupcake liners
Blend together with mixer. Place one wafer on bottom of cupcake liner. Fill 2/3 full. Bake at 325º for 25 minutes. Will be puffed up, but will settle. Cool. Keep in refrigerator until ready to use. Put any kind of fruit filling in a few hours before eating. The bottom can also be frozen & topped when ready to serve.
