2 C self-rising flour, 2 t dried chopped chives, 1/4 C shorting, 1/3 C crumbled blue cheese, 1/2 to 3/4 C milk, 1 egg white 3 T water and 1/2 C fine dry enriched bread crumbs, toasted dips.

Directions:
Directions:
Stir together flour and chives. Cut in shorting until mixture resembles coarse crumbs. Add blue cheese. Blend in enough milk to make a soft dough. Turn onto lightly floured surface and knead gently 20 times. Shape into 1" balls. Combine egg white and water. Dip balls into egg white mixture; roll in bread crumbs. Bake @ 425 for 10 to 12 min. or until golden brown.
