Penne with Chicken, Corn & Broccoli Recipe

8 oz. Penne Pasta
1 T Vegetable Oil
1/2 lbs. skinless, boneless chicken breasts cut into 1 inch chunks
1 Onion, chopped
1 Clove garlic, minced
2 C Broccoli Florets
10-oz package Frozen corn
1-1/2 C Chicken broth
1 t Basil
1/4 t Red pepper flakes
1/2 t Salt
1 t Cornstarch mixed with 1 T water
1/4 C Grated Parmesan cheese

Cook pasta until tender, rinse and drain well

In non-stick skillet, heat oil until hot but not smoking over medium heat. Add chicken and cook, stirring, until chicken is lightly browned, about 5 minutes. Transfer chicken to plate.

Add onion and garlic to pan and cook, stirring until the onion is softened, about 4 minutes. Add broccoli, corn, broth, basil, red pepper flakes and salt and bring to a boil. Reduce the heat to simmer and cook until the broccoli is crisp-tender, about 5 minutes. Stir the cornstarch mixture into the broccoli mixture. Return chicken to skillet. Bring to boil and cook, stirring until the sauce is slightly thickened and chicken is cooked through, about 1 minute.

Transfer mixture to large bowl, add pasta and toss to combine. Sprinkle with parmesan and serve
