2 cups sliced mushrooms
1/4 cup butter
1/4 cup flour
2 cups chicken broth.
1/4 cup milk.
1 tablespoon chopped fresh parsley
1/4 teaspoon ground nutmeg
Salt & pepper
3 cups chicken or turkey pieces
1 package of thin spaghetti (break in 2).
3/4 cup Parmesan cheese (grated).
1/4 - 1/2 package of shredded Mozzarella.

Cook spaghetti and drain. Saute mushroom in butter, stir in flour gradually adding chicken broth as it thickens. Stir in milk. Fold in chicken and spaghetti. Top with cheese. Place in buttered pan. Bake uncovered at 350 for 30 minutes.

This recipe is a great way to use up all that left over chicken or turkey from the previous day. A batch like this will get eaten for a couple of days with the remainder going into a Tupperware and into the freezer for a quick microwave lunch meal.
