Cream together:
1 cup shortening (margarine)
1-1/2 cup brown sugar
Add:
2 eggs
vanilla and/or almond extract (approximately 1 teaspoon)
1-1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 cups quick cook oatmeal
crushed walnuts (approximately 1/2 cup)

Directions:

Shape into small balls and flatten on cookie sheet. Bake for 14 minutes at 350 degrees.
