1 lb. package of prepared Cheese Tortellini.
Sundried Tomatoes in oil.
Frozen Chopped Spinach (one-half box).
Virgin or Extra Virgin Olive Oil.
2-3 Garlic Cloves, chopped.
1/4 cup Parmesan Cheese.

Directions:
Cook tortellini until fully cooked (in salted water). Drain but retain a cup of liquid to use in the finished dish. Partially cook half a box of chopped spinach in the microwave, leaving it slightly under cooked. Squeeze out all liquid using a thin strainer. Chop it into smaller pieces. Chop the sundried tomatoes into smaller pieces. Saute chopped garlic 2-3 minutes in enough olive oil to cover bottom of large skillet. Add sundried tomatoes and drained/chopped spinach. Add cooked tortellini and mix well. Turn off gas and add the Parmesan cheese. Mix well. Most likely you'll need to add some of the reserved pasta water for moisture.
