5-6 oz. Fettuccine (or other) pasta noodles
3 chicken breasts, skinned, no bones, cut into
1"x2" strips
1/2 cup Italian salad dressing
3-4 T. Butter to saute vegetables
1 med. yellow onion, finely chopped
6-8 white mushrooms, thinly sliced
1 med. red pepper cut into thin strips
1/4 tsp. Thyme - dry or fresh
Salt and Pepper to your taste
1 - 16oz. can green beans (or fresh beans)
1/4 cup grated Parmesan Cheese

Cut up chicken breasts into strips and marinate in the salad dressing while preparing other vegetables. In large skillet, melt enough butter to saute onion, red pepper and mushrooms until they just begin to get soft. Add chicken and salad dressing, stirring to mix well, allowing chicken to cook (maybe 5-6 minutes). Add salt and pepper to your desire. Drain liquid from green beans, retaining 1/4 cup. Add beans after chicken is cooked. Stir to heat through. Turn off gas. Add Parmesan cheese and a little pepper. Stir. Add some liquid from green beans if needed.
Prepare pasta according to package instruction. Serve chicken mixture over pasta (or over cooked rice). Whole wheat pasta works well.
