Shortcake:
2 cups all-purpose flour
2 tablespoon sugar
3 teaspoons baking powder
1 teaspoon salt
1/3 cup oil
1 egg
1 cup milk
Whipping Cream:
pint of whipped cream, whipped into foam
powdered sugar to taste
vanilla or almond extract
Berries:
strawberries (fresh or frozen), mashed
sweeten to taste

Mix shortcake ingredients together thoroughly.I have a special pan for making shortcake, but you can also use a greased cookie sheet too. Fill the pan cups or make a dollop of batter the size of the cake you want to serve. Bake in pre-heated oven at 450 degrees for 12-15 minutes, or when golden brown. Break the cake into a bowl and ladle on the strawberries liberally. Lavish the top with a big dollop of whipped cream.
