4 pork chops (3/4-inch thick)
2 Tbsp. flour
1/4 C. chopped onion
1/4 C. chopped green peppers
13-oz. can pineapple chunks in syrup, undrained
1 Tbsp. cornstarch
2 Tbsp. catsup
2 Tbsp. white vinegar
2 Tbsp. soy sauce

In skillet, brown chops on both sides over medium heat. Cover and cook for 30 minutes. About 15 minutes before meat is done, melt butter in a medium saucepan and saute onion and pepper until tender; add syrup from pineapple. Combine cornstarch, catsup, vinegar and soy sauce; stir this into the syrup mixture; cook, stirring until thickened. Add pineapple and heat through. Drain chops, top with sauce. Cook 15 minutes longer. Serve with steamed rice. Serves 4.
