4 - 5 large onions sliced thin (we use a combination of white, yellow and sweet. Leeks work well, too. Red onions don't!)
2 - 3 tablespoons white flour
1/2 stick of butter or more
2 - 32 oz containers of organic beef or vegetable broth
White wine or sherry to taste (optional)
1 cup or more shredded white cheese (Swiss is the classic)
1 - 1" slice of French bread per bowl

Directions:
Fill a large soup kettle with sliced onions. Sprinkle and toss with flour. Brown until lightly golden and transparent in the butter. Add the broth and bring to a boil. Turn down and add wine or sherry to taste. Simmer until onions are well cooked. Put soup into broiler proof serving bowls. Top with a slice of French bread and lots of cheese. Broil until cheese is bubbly and browning. Serve immediately.

Since we have vegetarians and meat eaters in our house, we often make two pots - one with beef broth and one with vegetable.
