Bottom Crust:
1/2 cup butter
2 cups flour
1 cup sugar
Filling:
2 packages cream cheese
1/4 cup sugar
1/4 cup milk
2 teaspoons vanilla
1 (20 oz.) can of crushed, drained pineapple (approximately 2 cups)

Topping
1 c. shredded coconut
2 T. melted butter

Directions:
Directions:
Crust: Mix butter, flour, and sugar and press into a 9 x 13 inch pan. Bake at 350 degrees for 15 to 20 minutes until slightly golden. Filling: Cream together cream cheese, sugar, milk, and vanilla. Stir in well drained pineapple and spread over crust. Topping: Mix coconut with melted butter and sprinkle on top. Bake at 350 degrees for 15 to 20 more minutes.

This is my mom's recipe. Coconut will be white when bars are finished. Bars taste like a pina colada cheese cake.
