Brine for 6 or 7 pound turkey. 1/2 C pickling salt
1 C Morton Tender Quick
5 Tbsp or more Wright's Liquid Smoke. Soak turkey in GLASS or PLASTIC container completely submerged in brine for 24 hours in cool place (45 - 50. Amount of brine depends on size of turkey. After soaking, rinse off brine and dry with paper towels. Oil bird lightly with salad oil (not butter.) Place turkey on rack, breast down. It bakes in this position the entire time. Do not cover.

Bake at 350 first hour and at 250 thereafter. Bake at least one hour per pound of bird. When done, let cool in place on rack so juice runs into breast meat. Can be frozen and served later.
Your meat will look pink.
