1 cup almonds
1 cup rice flour
1/2 teaspoon salt
1 cup dates
1/2 teaspoon vanilla
1-2 tablespoons honey
1 cup mini chocolate chips
2 tablespoons or so water

Directions:
Directions:
In a food processor, pulse the almonds. If you want a completely creamy cookie dough, pulse them into almond flour. I pulse until they are small chunks. Add dates and process until dates are fully "smooshed". Add remaining ingredients, saving water for last and only add if needed to form into a cookie dough texture. Alternatively, process the almonds and dates separately and then pulse it all together to better control the texture if you don't want it totally creamy. In a glass dish, "smoosh" cookie dough into the bottom and cut with a knife like cookie dough bars. Alternatively, you can form them into little balls which can be eaten as energy balls on the go. This, however, takes more time.

A friend and I began experimenting with raw food energy bars when her husband was diagnosed with MS and needed a healthful junk food alternative. As a bonus, nuts and fruit are not only delicious but also great sources of quick and dense energy. By mixing them into balls, they become easily accessible yummy treats. They're perfect for on-the-go snacking or satisfying a cookie dough craving, while subbing out the fat and sugars for the loads of micronutrients found in dates and the the protein and numerous other nutrients found in the almonds! And the kids love them!
