1 1/2 c flour
1 T baking powder
1/2 tsp salt
1/4 c sugar
4 T unsalted butter, melted & cooled
1 lg egg, beaten
3/4 c plus 2 T milk
1 c fresh washed blueberries

Directions:
Directions:
Preheat oven to 400. Line a muffin pan with 10 paper muffin cups or spray with nonstick cooking spray. Fill empty cups halfway with water. Sift the flour, baking powder & salt into a large bowl. Stir in the sugar. In a separate bowl, whisk together the melted butter, egg & milk. Pour the wet ingredients over the dry ingredients & whisk until just blended (mixture should be slightly lumpy).

Add the blueberries to bowl & stir them in just enough to combine. (If stirred too much, muffins will turn green.)

Divide the batter evenly among the prepared muffin cups. Bake the muffins until golden, 18-24 min. Remove the muffins from the pan & transfer to a wire rack to cool. Muffins are best served warm.
