4 egg yolks
1/2 t. salt
1/2 t. dry mustard
1 T. lemon juice
Dash tobasco
1/4 lb. butter, melted

Directions:
Directions:
Mix the first five ingredients in blender bowl. Pour melted butter in a slow stream with the blender running on medium. Blend until all the ingredients are emulsified.

Hollandaise is great on fresh steamed asparagus. My kids love Hollandaise and will eat most anything with it. Kohen licks the Hollandaise off asparagus and tries to talk his Papa (Jerry) into eating the asparagus for him.
