6 oz. marinated artichoke hearts, chopped
1 c. feta cheese, crumbled
3 scallions, minced
10 oz. linguine, cooked
2 T. olive oil
Salt and pepper to taste
Fresh Parmesan cheese, if desired

Directions:
Directions:
Drain off and discard half the liquid on the artichokes. Pour remaining liquid into a large serving bowl. Add artichokes, parsley, olive oil, some salt and pepper. Add drained pasta to bowl; toss well. Serve topped with Parmesan cheese.
