1 T. flour (rounded)
2 T. bacon drippings
1 C. sugar
1/4 C. vinegar
1/4 C. water
1/2 C. mayo
1 T. onion, chopped fine
2 T. sweet pickle relish
1 tsp. (or less) celery seed
1 to 2 T. pimientos, to taste
3 eggs, hard-boiled, sliced
10 slices bacon, crisp crumbled
5 to 10 potatoes, cubed
Salt and pepper to taste

Directions:
Peel, boil (just until tender) and drain potatoes; keep hot while preparing sauce. Boil eggs also. Fry bacon until crisp in large skillet; drain off all but 2 tablespoons grease. Add flour; stir out lumps. On low to medium heat, add next four ingredients (sugar and liquids). Sauce with be thick. Add onion, relish, celery seed, pimientos, and crumble bacon bits. Fold in potatoes and egg slices. Keep at low hear, fold occasionally. Simmer around 5 minutes. Serve hot. Refrigerate leftovers-excellent cold.
