2 lbs. turtle (snapper or soft shell)
1/2 lb. butter
1 medium onion, diced
2 C. celery, diced
1 C. baby lima beans
1 C canned carrots
1 can tomato juice and tomatoes
Water for soup
3 medium potatoes, diced
1/2 C. parsley
Salt and pepper

Directions:
Directions:
Cut turtle into 1/4 to 1/2" pieces. Brown in butter. Put all together and simmer 45 minutes.
