1 cup flour
3 eggs
2 teaspoon vegetable oil
1/2 teaspoon salt

Directions:
Directions:
Preheat oven and popover pan to 450 degrees. Combine all ingredients in a blender on high speed until bubbles form (approx. 10 seconds). I skip the blender and use an electric mixer. Fill preheated popover pan cups about 1/2 full. Bake 20 minutes at 425, reduce heat, bake an additional 20 minutes at 350. Makes 6 popovers.

Nothing is better than a hot popover and ice cold butter. The Ranch House Restaurant in Laporte also makes popovers into desert. They cool the popover and slice them in half. Scoop out the soft middle with a spoon so the crispy shell of the popover remains. Pack with hard vanilla ice cream. Pour on some chocolate syrup and add some whipped cream from a spray can.
