2 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
1 1/2 cups sugar
1 cup cooking oil
3 eggs
1 tsp. vanilla
1/2 cup raisins
1/2 cup coconut
2 cups fresh mangos, chopped

Directions:
Directions:
Mix together flour, baking soda, salt, cinnamon and sugar. Add oil, eggs, vanilla, mangos, raisins and coconut, mix well. Spray loaf pan and place in mixture. Bake 350 for about 1 hour. If the loaf begins to brown too quickly place foil on top. If you make a double recipe, use only 1 cup cooking oil.
