3/4 c.bread flour
1 egg

Directions:
Make mound with flour on your work surface and scoop out a well in the middle (you can use a bowl if you want). Pour the egg into the hole, add the salt, and work the egg and flour together until it forms a smooth dough adding just a drop of water if necessary. Knead the dough for ten minutes until smooth, firm and quite elastic.
Flour the work surface and start to roll out the dough, flipping occasionally and flour it as necessary to keep it from sticking. Roll thin 1/8" Slice with pizza cutter in thin strips it will double in size once cooked.
Immediately add fresh pasta to salted bowling water and cook about 6 minutes. Serve with sauce, butter, or olive oil and seasonings.
