1 mango, peeled, seeded and diced
1/2 c. diced red bell pepper
1 jalapeņo chile
1/4 c. finely chopped red onion
1 Tbsp. chopped fresh cilantro
1 Tbsp. freshly squeezed lime juice
1 tsp. grated lime zest
salt and pepper to taste

To prepare mango salsa, combine all salsa ingredients in a non-reactive bowl. Let stand one hour to allow flavors to mellow.
