3/4 cup sugar
1/4 cup flour
dash of salt
3 Tbsp melted butter
1 tsp grated lemon rind
1/4 cup lemon juice
1.5 cups milk
4 egg yolks (well beaten)
4 egg whites

Directions:
Directions:
Mix together 1st 6 ingredients (sugar - lemon juice). COmbine milk and beaten yolks together. Add to lemon mixture. Beat the egg whites until stiff. Fold the 4 egg whites into the lemon mixture. Pour into either 6-8 individual bakers or 1 small casserole. bake at 350 for 30 minutes (individual) or 40 minutes (casserole). Place bakers in large pan with 1 " of water to bake. Dust with powdered sugar or add whipped cream.
