3 lbs sweet potatoes, 3/4 lb sharp white cheddar cheese or 1 1/2 cups grated, 1 cup sour cream, salt and pepper.

Directions:
Directions:
Boil the potatoes in salted water about 15-20 minutes until pierceable. Drain in cold water and peel, cut into 1/3 " slices. Grate cheddar (large holes on grater). Line the bottom of a spring form pan w/ a round of tin foil. Sprinkle 1/2 cup cheese on bottom. Add a layer of sliced potatoes, overlapping slightly until bottom is covered. Spread 1/3 cup sour cream over potatoes. Salt and pepper., then cover with 1/3 cheese and repeat process 2x endin with a layer of cheese. Press down with a spatula. Place pan on a baking sheet and bake 40 minutes until golden brown. (Press down during baking) Let rest for 10 minutes before serving. Loosen edge of gratin with a knife, remove from pan and cut into wedges.
