Tasso Ham
1 stick butter
1/2 cup flour
4-5 cups chicken broth
1 Tbsp.. parsley
1 tsp. olive oil
Italian sausage (about a pound)
shrimp (about a dozen)
Grits prepared with half milk and half water

Directions:
Directions:
Saute ham in butter. Add 1/2 cup flour to make a roux. Stir until thick and light brown (1-2 minutes). Wish in 4 cups of chicken broth (1 cup at a time). Add parsley. In a separate pan brown sausage in olive oil. Add shrimp. Add a splash of chicken broth. Add Tasso gravy. Simmer until shrimp are done (or heated). Serve over grits.

Only a small amount of ham is needed. I've left other amounts to your discretion.
