1 lb chopped mushrooms, 2 chopped onions, package of chopped carrots, 5/6 stalks celery-chopped, 1 cup chicken broth (or more), 8-10 eggs, parsley, salt and pepper, 1/2 tsp poultry seasoning, 2 -3 large loaves white bread.

Set bread on counter and allow to get stale, then turn and get that side stale. Remove crusts and cut into cubes. (need about 16-20 cups). Put into large bowl, add parsley, poultry seasoning, salt and pepper. Meanwhile, saute the onions, carrots, and celery in butter. When almost soft add mushrooms and saute. Add to bread mixture, Add cup of chicken broth, and beaten eggs slowly until desired consistency. (Do not overmix or it will be like Glue).
Put some in turkey and the balance in a buttered baking dish, cooking for about 1 1/2 hours - two hours.
