2 T vegetable oil
1 small onion, minced
1 or 2 cloves garlic, minced
2 tsp curry powder
1/2 tsp ground cumin
1/4 tsp or more cayenne
2 large or 3 small boiling potatoes, peeled and diced
About 2 cups cauliflower flowerets
1/2 C water
Salt and black pepper to taste
Fresh lemon juice
1 tsp grated fresh ginger (optional)

Directions:
Heat the vegetable oil in a large skillet over medium-high heat and add the onion and garlic. Fry until just beginning to brown, stirring frequently. Add curry powder, cumin and cayenne and stir for a minute or two, until the spices are very fragrant. Add potatoes, cauliflower, water, salt, pepper and lemon juice to taste. Stir, then cover and lower heat. Cook the stew until vegetables are just tender, 20 - 25 minutes. Stir frequently during cooking. Add optional ginger and stir over heat for a moment.
