2 cans (approx. 11 oz) red tart cherries - not pie filling!
1/2 to 3/4 c sugar (depends on how tart you like it)
3 Tbsp cornstarch
1 tsp red food coloring
1 Tbsp butter or margarine
1/2 tsp cinnamon
2 crusts for a 9 inch pie

Preheat oven to 400 Drain the cherries and keep the juice from only one can. In a saucepan, mix the cherry juice, sugar, cornstarch, and red food coloring. Cook over medium heat, stirring gently until thickened. Remove from heat and carefully stir in all the cherries. Pour filling into bottom pie crust. Dot with butter and cinnamon. Cover with top crust, seal, and cut vent slits. Dust the top of crust with a little sugar. Bake 30-40 minutes or until crust is lightly browned and filling is bubbly. Cool several hours before slicing to allow the filling to thicken.

Jim George loves cherry pie! Most recipes call for almond extract but I don't like the flavor so I just use a little cinnamon instead. I usually put the full 3/4 cup of sugar and it is still nice and tart.
