1 T. butter
1 small onion, coarsely chopped
1 and 1/2 lb. asparagus, trimmed and coarsely chopped
1 can chicken broth or vegetable broth (14 oz.)
1/2 t. salt
1/8 t. pepper
1/4 c. heavy or whipping cream
sliced green onions and steamed asparagus spears (optional)

1) In 4-quart saucepan, melt butter over medium heat. Add onion and cook 8 to 10 minutes or until tender and lightly golden, stirring often. Add asparagus and cook 5 minutes, stirring occasionally.
2) Add broth, salt, pepper, and 1 cup water; heat to boiling over high heat. Reduce heat to low; cover and simmer 8 to 10 minutes or until asparagus is very tender. Remove saucepan from heat.
3) In blender at low speed, with center part of cover removed to allow steam to escape, blend asparagus mixture in small batches until smooth. (If you like, use hand immersion blender).
4) Return blended soup to saucepan. Stir in cream and heat through. Spoon soup into 4 bowls; top with green onion and steamed asparagus spears, if desired.
