4 tomatoes, chopped
2 tbsp. red onion, finely chopped
2 Cloves Minced Garlic
4 oz. Crumbled Feta Cheese
1 tbsp. Fresh Parsley,chopped
3 tbsp. Red Wine Vinegar
3 tbsp. Olive Oil
tsp. Salt
2 Avocados, chopped
Tortilla chips or Crostini

Directions:

1. Stir together first 9 ingredients.
2. Gently stir in the chopped avocado just before serving.
3. Serve with tortilla chips (I use the scoop ones as it makes it easier) or crostinis.
