6 cups whole milk, 3/4 cup long grain rice, 3/4 cup sugar, 1 cup heavy cream, 3 egg yolks (beaten), 2 tsp vanilla, 1/4 tsp salt, 1 tsp cinnamon, 1 cup raisins (optional)

Directions:
Directions:
Rinse a large saucepan with cold water. Do not dry. Pour in milk and bring to a boil over medium heat. Stir in rice and simmer uncovered until rice is tender (about 45 minutes). Meanwhile, in a small bowl, combine cream, sugar, beaten yolks, vanilla, and salt. When rice is tender, stir in the cream mixture until completely combined and bring to a boil. Add raisins if desired. Remove from heat and pour into a 2 qt oval or oblong dish. Sprinkle with cinnamon and refrigerate. Soooo good!
