1 3/4 C. Sugar
1 1/4 C. oil
4 eggs
2 C. flour (plus heaping tablespoon for high altitude)
2 tsp soda
2 tsp baking powder
1 tsp salt
3 C. grated carrots
1/2 C. flaked coconut
1 C. nuts

Directions:
Directions:
Mix first three ingredients. Combine dry ingredients and add to first mixture. Add carrots, coconut and nuts. Bake in 9 x 13" cake pan.

Bake 350 - 25-30 minutes or so.

I frost this good cake with a cream cheese frosting to which I add some crushed pineapple. Be sure and squeeze dry the pineapple first or your frosting will be too runny.
