3/4 c. uncooked instant rice, or 1-1/2 c. cooked rice
1 lb. ground beef or ground turkey
1 can (15-1/4 oz.) corn
1 can (14-1/2 oz.) diced tomatoes with garlic and onion
1 envelope taco seasoning
1/2 c. water
1 cup coarsely crushed tortilla chips
1-1/2 c. 6 oz. shredded cheddar cheese

Directions:
Directions:
Spread rice in bottom of lightly greased 2 qt. baking dish. Brown beef in skillet; drain. Stir in corn, tomatoes, taco seasoning, and water; mix well. Spoon meat mixture over rice. Cover and bake at 350 degrees for 25 minutes. Top with tortilla chips and cheese. Bake for 5 minutes or until cheese is melted.
