1 lb bulk sausage crumbled
1 (4 oz) can mushrooms drained
1 medium onion chopped
3/4 t salt
3/4 t pepper
6 eggs
3 T sour cream
7 T picante sauce
8 oz. grated cheddar cheese
8 oz. grated mozzarella

Directions:
Directions:
Preheat oven to 400. Grease a 9x13 casserole. In skillet brown sausage, mushrooms, and onion. Season with salt and pepper. Drain well. Combine eggs and sour cream in blender. Whip for 1 minute. Turn into baking dish. Bake until eggs softly set (8 - 10 minutes) Spoon picante evenly over top. Add sausage mixture and top with combined grated cheeses. To serve immediately, broil until cheese melts. If you want to serve the next day, remove from refrigerator and bake at 325 for 30 minutes in a preheated oven. Serve with fresh fruit.
