1 T. olive oil
4 boneless chicken breasts
1/2 t. salt
1/4 t. pepper
1/3 c. chicken broth
1/4 c. white wine
1 and 1/2 T. lemon juice
1/4 c. chopped parsley
1 T. capers, drained

Directions:
Directions:
Pound chicken to 1/2" thickness. Sprinkle with salt and pepper. Saute in hot olive oil at medium high until done. Remove. Add broth, wine and lemon juice; reduce heat and simmer 1 minute. Stir in parsley and capers. Spoon sauce over chicken.

The chicken can be lightly dusted with flour or panko crumbs before sauteing A tablespoon of butter can be added to the sauce at the end for extra richness.
