1 medium onion, chopped
2 cloves garlic, minced
2 tsp. olive or canola oil
3 cups reduced-sodium beef broth or vegetable broth
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
1 1/2 cups picante sauce
1 cup uncooked spiral pasta
1 small green pepper, chopped
2 tsp. chili powder
1 tsp. ground cumin

Directions:
Directions:
In large saucepan, saute' onion and garlic in oil until tender. Add the broth, beans, tomatoes, picante sauce, pasta, green pepper and seasonings. Bring to a boil, stirring frequently. Reduce heat; cover and simmer for 10-12 minutes or until pasta is tender, stirring occasionally.

This is one of my favorite recipes, though I don't always make it as a soup. Instead, I cook a box of pasta separately from the mixture and add it to everything after the pasta is cooked through. This is a VERY hearty meal.

If you make it as a soup, you can also top with cheddar cheese and sour cream.
