2 cups minced bell pepper
1 1/2 cups cider vinegar
6 1/2 cups sugar
2 tsp. tabasco sauce
1 tsp. cayenne pepper
6 oz. Certo ( this is a jelling agent, found in the canning section)

Directions:
Directions:
Blend peppers, vinegar, tabasco and pepper at high speed for 3-4 seconds. Add to sugar in a 6 quart sauce pan. Bring to rolling boil that cannot be stirred down. Remove from heat and let stand for 10 minutes. Skim off froth. Pour into hot sterilized jars and seal in hot water bath. Makes about 7-8 jars.

Serve over a block of cream cheese with a buttery cracker. Or mix with Cheez Whiz and serve on crackers. Once you taste it, you will find a hundred uses.
