3 pounds haricort verts ( French green beans), fresh, trimmed
1/2 pound 1/4 " thick bacon slices cut crosswise into thin strips
1/2 cup shallots ( about 3 )
2 garlic cloves, chopped
3 tbsp. Dijon mustard
1/4 cup wine vinegar
1 tsp. mustard
1/2 cup olive oil
1 cup crumbled soft fresh goat cheese ( about 4 oz.)
1/2 cup pomegranate seeds or dried sweetened cranberries

Cook beans in a large pot of boiling salted water until crisp and tender, about 15 minutes. Drain, rinse with cold water and drain again. Pat dry. Place beans in a large bowl. Cook bacon until crisp. Add shallots and garlic to drippings in skillet. Saute over medium heat until beginning to soften about 1 minute. Add vinegar, mustard; whisk scraping up brown bits. Whisk in oil. Season with salt and pepper. Toss beans with dressing. Sprinkle with cheese, bacon and pomegranate seeds or cranberries.
