2 frying chickens, cup up, trimmed of fat and skin
2/3 cup water
1/3 cup lemon juice
2 tsp. dried mint leaves
1/2 cup Italian-seasoned bread crumbs
1 tsp onion and/or garlic salt
1 tsp, ground nutmeg
1 tsp. cinnamon
1 tsp. paprika

Directions:
Place chicken pieces in plastic bag or large bow. Mix together water, lemon juice and mint. Pour over chicken. Marinate 30 minutes at room temperature or several hours in the refrigerator, turning frequently. Drain chicken. Combine remaining ingredients in a bag. Place chicken pieces, a few at a time, in bag; shake to coat chicken. Arrange pieces, skin-side up, in ovenproof pan. Bake uncovered at 350 for 1 hour, or until crisp.
