1/4 stick margarine
4 Tbsp. self-rising flour
1 pkg. chopped broccoli, or leftover cooked broccoli
with water it was in
2 cup water
1 can Cheddar cheese soup
1 tsp salt
2 Tbsp minced onion
1 cup low-fat milk

Directions:
Directions:
Prepare roux with margarine and flour in large, heavy saucepan. Add 1 cup of water and stir until smooth. Add broccoli and water it was cooked in.
Add Cheddar cheese soup,undiluted, and second cup of water. Stir until well blended and smooth; add salt, minced onion and milk. Do not boil. Stir frequently to prevent sticking. Cook until minced onion is tender.15-20 minutes.

Making soup is not an exact science. you may use and entire package of chopped broccoli or use very little broccoli. Always cook broccoli to mushy stage before adding to soup.
